Sapphire Princess Resumes Operations After Renovations, Adding New Specialty Restaurants

The Sapphire Princess returned to sailing after completing a two-week renovation process in Portland, Oregon. As a result of this refurbishment, the ship features new experiences for its guests, highlighting the addition of two renowned specialty restaurants: Makoto Ocean and Crown Grill, available starting November 16, 2025.

New Dining Options

Makoto Ocean Sushi by Chef Makoto Okuwa

This restaurant, which debuted on Sun Princess and Star Princess, now joins Sapphire Princess, occupying the space of the former Internet Café on Deck 7. Makoto Ocean brings Edomae-style sushi cuisine to sea, backed by the expertise of Chef Makoto Okuwa. The menu offers dishes such as truffle salmon, snow crab temaki, toro tartare, and signature cocktails, including the Genmai Negroni and Kodai No Hana, which blends yuzu juice and traditional sake.

Crown Grill Steakhouse

Located in the former Savoy lounge on Deck 5, Crown Grill specializes in premium cuts of meat, chops, and fresh seafood. The space was redesigned with an elegant atmosphere, solidifying its reputation as one of the finest steakhouses at sea. Both restaurants have a fixed price of $60 per person, but are included in the Princess Premier package for those who choose that experience.

Itineraries and What’s New for Sapphire Princess

Following its revitalization, Sapphire Princess begins voyages to Mexico, followed by a season in South America and Antarctica. For spring and summer 2026, it will shift to routes through the Mediterranean and Northern Europe. In fall of that year, it will sail between Canada and New England.

A notable event will occur in March 2027, when Sapphire Princess and Diamond Princess will reunite in Japan for the company’s largest season in that country, with regular departures from the Tokyo region, from March through December.

Sami Kohen, vice president of food and beverage for Princess Cruises, emphasized that these enhancements position Sapphire Princess as one of the most attractive ships in the fleet, especially by incorporating two signature culinary experiences.
